A section cut of Tokyo’s famous fish market, Tsukiji, draws the relationship between the cuts of the fish and the cut of the market. Following the path of Tuna through the interconnected spaces of the market and the different blades it passes under, one begins to understand the artistry of Japanese Foodways. In a matter of hours, from dock to sushi bar, fish is transformed (with only the cut of a blade) into food.
